Development of Value Added Amaranth Seed Laddus

Most known cereals have been the staple food of humans but these crops are not being able to fulfill requirements on aspects nutrition as well security. The Food and Agriculture Organization (FAO) has identified amaranth under-utilized crop immense potential upgrade health, global hunger. Amaranth seeds rich in energy, protein, calcium iron it is fast easily grown difficult weather soil conditions. This study aims formulate nutritious sweet snack (laddu) by substituting different proportions wheat flour/Bengal gram flour with roasted grinded for vulnerable groups. Sensory analysis done 20 semi-trained panelists 9 point hedonic rating scale. All products accepted.
